Tasty Pinakbet

Cook time: 20 mins


Ingredients:

1 lb pork belly

1 small onion

4 cloves of garlic

6 tomatoes

1 eggplant

1 bitter gourd

1/2 Asian squash

Okra handful

String beans handful

1 tbsp shrimp fry

1 tsp chicken bouillon (optional)

1 tsp coconut oil


Preparation:

  1. Cut eggplant into cubes.
  2. Remove bitter gourd seeds. Slice bitter gourd thin and soak in salt water to remove some bitterness.
  3. Cut Asian squash into cubes.
  4. Chop onions, garlic, tomatoes.
  5. Cut the tops of okras.
  6. Cut string beans.
  7. Slice pork belly thin.


Cooking:

  1. Heat oil and pan fry pork belly to sweat out the fat until browned. Remove some fat.
  2. Saute onion and garlic.
  3. Add tomatoes.
  4. Add 1 tbsp of shrimp fry.
  5. Cook for 3 minutes to soften the tomatoes.
  6. Add string beans, squash, eggplant and cook for 3 minutes.
  7. Add okra and bitter gourd. Cook for 5-7 minutes until soften.
  8. Mix well and serve hot. Enjoy!
