Ingredients:
1 lb pork belly
1 small onion
4 cloves of garlic
6 tomatoes
1 eggplant
1 bitter gourd
1/2 Asian squash
Okra handful
String beans handful
1 tbsp shrimp fry
1 tsp chicken bouillon (optional)
1 tsp coconut oil
Preparation:
- Cut eggplant into cubes.
- Remove bitter gourd seeds. Slice bitter gourd thin and soak in salt water to remove some bitterness.
- Cut Asian squash into cubes.
- Chop onions, garlic, tomatoes.
- Cut the tops of okras.
- Cut string beans.
- Slice pork belly thin.
Cooking:
- Heat oil and pan fry pork belly to sweat out the fat until browned. Remove some fat.
- Saute onion and garlic.
- Add tomatoes.
- Add 1 tbsp of shrimp fry.
- Cook for 3 minutes to soften the tomatoes.
- Add string beans, squash, eggplant and cook for 3 minutes.
- Add okra and bitter gourd. Cook for 5-7 minutes until soften.
- Mix well and serve hot. Enjoy!
