Filipino Favorite Sweet Turon Spring Rolls

Prep time: 20 mins; Cook time: 6 mins or until brown Ingredients: 4 pieces plantain sliced half then quart 1/2 brown sugar 1 can or 5 pieces ripe jackfruit sliced thinly (fresh ripe jackfruit can be use) 1 pack or 24 pieces lumpia/spring roll wrapper Oil for frying Preparation: 1. Slice ripe jackfruits about 1/4 inch thick. 2. Peel and slice plantain (cut into half then each half cut into quarter) 3. To wrap the plantain: Separate Spring roll sheet. In a flat surface place 1 spring roll sheet, position like a diamond. Roll each plantain on a sugar, place on the shell, add 2 strips of jackfruits, rollover top shell to the plantain, fold inward both side of the shell roll over toward the last corner then seal using water. Repeat the process until all 24 pieces is done. Cooking: 1. Heat up medium and deep pan. Pour enough oil to submerge the turon. 2. When the oil is hot drop the Turon. Sprinkle with a pitch of sugar. Fry for about 3 minutes each side or until slightly brown. 3. Remove from the pan and repeat the cooking process to the other batch. 4. In any case you can frozen the remaining turon. Put them to a ziplock and freeze. It will last for 3 months or more. Note: All times are approximations. Adjust flavors by increasing/decreasing amounts of ingredients.
