Ingredients: 3 tbsp extra virgin olive oil 1 medium yellow onion chopped 1 cup jasmine brown rice 1-3/4 cups chicken broth (1 3/4 cups water plus 1 tbsp chicken bouillon paste) 1 tbsp lemon juice 1 tbsp light soy sauce 40 - 50 pieces of grape leaves 1/4 cup walnut chopped 1/4 cup raisin chopped 2 tbsp fresh mint minced 1 tbsp fresh dill minced 1 tsp ground cinnamon 1/4 tsp ground all spices 300 grams shrimp 2 cups of water 2 pieces lemon thinly sliced Preparation: 1. Chopped onion, minced fresh mint and dill. 2. Sliced one lemon in a half and squeeze. Sliced the remaining 2 lemon. 3. In a food processor pulse walnut, raisin and shrimp one at a time. Cooking Time #1: _Rice Cooking 1. In a pot heat oil and place the onion cook until translucent or 3 - 5 minutes 2. Add the brown rice, stir add the chicken broth. 3. Add lemon juice and soy sauce. Stir and cover let it boil. 4. Uncover, stir and reduce heat to low setting. Cover and simmer for about 40 minutes then turn off the heat. Set aside _Shrimp cooking 1. In a small pot or pan put a little amount of water about 1 tbsp 2. Add chopped shrimp until color change into pink. _Grape leaves 1. In a big pot boil enough water and put grape leaves blanch per batch for about 2 minutes. Rinse with cold water. Drain. 2. Wipe dry with paper towel. Set aside. Remove the hard stem and tough center ribs. Cooking #2: 1. In a large bowl combine cooked rice, cinnamon, all spices, mint, dill, walnut, raisin and shrimp. Mix well. 2. Pre heat oven about 350 F 3. To stuff grape leaves , place about a 1 tbsp of filling into each large grape leaves.Roll up slightly just to cover the filling, fold each side of the leaf, continue rolling until the grape leaf is nice pack. 4. In a large baking casserole arrange the grape stuff. Cover the bottom of the casserole with grape leaves, add 1 layer of stuffed leaves, top with sliced lemons. Do the same process until all stuffed grape leaves placed in the casserole. 5. Pour 1 cup of water over the leaves. Add more water if necessary. Then cover completely with the grape leaves. 6. Place a baking plate on top of the grape leaves to weigh them down. 7. Bake for about 1 hour and 15 minutes. Serve at room temperature. Enjoy! Note: All times are approximations.
