Shrimp Squash & Micro Green Sweet Peas

Prep time: 10 mins; Cook time: 20 mins


Ingredients:

1 whole medium asian squash or any type of squash base on your preference slice into cubes

1 small or 1/2 of a medium size red onion chopped

2 inches ginger

754 ml coconut milk

1 lb shrimp shell on

1 lb micro-green sweet green peas - alternative greens malunggay

Salt 

1 tbsp Vegetable bouillon paste


Preparation:

  1. Chop or slice onion and ginger
  2. Peel and slice squash into cube about 1 inch thick
  3. Clean the shrimp. Set aside

Cooking:

  1. In a large pan pour the coconut milk. 
  2. Add onion, ginger and vegetable bouillon paste. Boil.
  3. Add the squash. Stir and cook until squash is soft.
  4. Add the shrimp. Cook for another 3 to 5 minutes.
  5. Add the green peas leaves. Stir. Serve hot. Enjoy!

Note: All times are approximations. Adjust flavors by increasing/decreasing amounts of ingredients.
