Prep time: 10 mins; Cook time: 20 mins
Ingredients:
1 whole medium asian squash or any type of squash base on your preference slice into cubes
1 small or 1/2 of a medium size red onion chopped
2 inches ginger
754 ml coconut milk
1 lb shrimp shell on
1 lb micro-green sweet green peas - alternative greens malunggay
Salt
1 tbsp Vegetable bouillon paste
Preparation:
- Chop or slice onion and ginger
- Peel and slice squash into cube about 1 inch thick
- Clean the shrimp. Set aside
Cooking:
- In a large pan pour the coconut milk.
- Add onion, ginger and vegetable bouillon paste. Boil.
- Add the squash. Stir and cook until squash is soft.
- Add the shrimp. Cook for another 3 to 5 minutes.
- Add the green peas leaves. Stir. Serve hot. Enjoy!
Note: All times are approximations. Adjust flavors by increasing/decreasing amounts of ingredients.
