Prep time: 30 mins; Cook time: 15 mins
Ingredients:
2 bell peppers
1 medium onion
2 chicken breasts
1-1/2 cup flour
1/2 cup cornstarch
1 tsp salt
1 egg
1 cup water
1 tbsp oil
3 tbsp pineapple juice
1/4 cup rice vinegar
2 tbsp soy sauce
1/4 cup ketchup
1/4 cup sugar
2 tsp garlic powder
1 tsp salt
8 oz can pineapple chunks
Preparation:
1. Slice bell peppers vertically. Remove seeds. Slice into 1 inch squares. Repeat process.
2. Prepare & peel onion. Cut into 1 inch squares.
3. Cut chicken breast lengthwise. Then cut into bite-size cubes. Repeat process.
4. In a mixing bowl, add 1-1/2 cup flour, 1/2 cup cornstarch, 1 tsp salt, 1 egg, 1 cup water, and 1 tbsp oil. Mix thoroughly.
5. Drench chicken cubes into mixture. Cover & set aside.
6. In a separate mixing bowl, add 3 tbsp pineapple juice, 1/4 cup rice vinegar, 2 tbsp soy sauce, 1/4 cup ketchup, 1/4 cup sugar, 2 tsp garlic powder, and 1 tsp salt.
Cooking:
1. Heat enough oil for deep frying.
2. Drop chicken individually so it doesn’t clump together. Flip when color turns slightly golden.
3. Remove when color turns golden or crispy.
4. In a separate pan heat 2 tbsp olive oil and saute onions, bell peppers, and pineapple chunks.
5. Pour sweet & sour sauce.
6. Add fried chicken. Stir thoroughly. Serve hot. Enjoy!
