Ground Chicken Picadillo

Preparation Time: 30 minutes

Cooking time: 30 minutes


Ingredients:

2 lbs chicken thigh or breast ground

2 tbsp olive oil 

1 medium onion chopped

6 cloves garlic minced

1/2 medium size green and red bell pepper diced

2 medium size potatoes cubes

2 medium size carrots cubes

1 8.5 oz sweet green peas

1 cup homemade tomato sauce

1 tbsp tomato paste

1 tbsp banana catchup

1 cup chicken broth

1 tsp Paprika

Salt and pepper to taste


Preparation:

  1. Peel garlic and mince
  2. Peel onion and chop
  3. Slice bell pepper, remove seeds then dice
  4. Debone chicken  optional you can buy ground chicken


Cooking:

  1. Heat pan in a high flame, add oil then saute onion until slightly brown.
  2. Add garlic continue sautéing about half a minute.
  3. Add chicken fry at least 2 minutes. 
  4. Add tomato paste, tomato sauce and catchup. Stir and simmer.
  5. Add chicken broth cover and cook for about 15 minutes.
  6. Add the carrots stir and add potatoes. Simmer for another 8 minutes.
  7. Add bell pepper, salt, pepper and paprika.  Simmer until bell pepper soften.
  8. Add the sweet peas. Simmer a minute. Serve hot. Enjoy!

Note: All times are approximations. Adjust flavors by increasing/decreasing amounts of ingredients.
