Fully Loaded Filipino Pork Pochero

Prep time: 15 mins; Cook time: 40 mins Ingredients: 1.5 lbs pork cut into serving size 10 pieces fresh tomatoes sliced 1 yellow onion peeled and cubes 6 cloves garlic peeled minced 2 tbsp olive oil 1 piece plantain sliced 2 medium size potatoes cut into quarter 1/2 napa cabbage sliced half 1 bunch green kale 1 can 8oz tomato sauce 1 can 15.5 oz garbanzos 2 tbsp fish sauce Salt and pepper to taste Preparation: 1. Peel and mince garlic and chop onions. 2. Slice pork meat into bite size pieces. 3. Chop tomatoes. 4. Slice plantain at least 1 inch thick. 5. Slice potatoes into quarter pieces. 6. Slice napa cabbage into half 7. Clean green beans and kale 8. Open tomato sauce and garbanzo beans Cooking: 1. In a heated pot, pour oil and sauté onion at least 2 minutes or until slightly brown. 2. Add garlic continue sautéing for 1 minute. 3. Add tomatoes and cook until soft then add sliced meat, tomato sauce. Stir and cover, boil for about 5 minutes. 4. Add 2 cups of water cover and let it boil until meat is tender. *If using stove top boil for 35 minutes but for pressure cooking simmer for 20 minutes. 5. Add potato, plantain, garbanzo beans and fish sauce. Cover and simmer until potato is halfway cook. 6. Add green beans, kale and napa cabbage & continue cooking for 8 - 10 minutes. Serve hot. Enjoy! Note: All times are approximations. Adjust flavors by increasing/decreasing amounts of ingredients.
