Easy Clams & Kale Pasta

Prep time: 15 mins; Cook time: 10 mins

Ingredients: 1 lb Penne Rigate pasta cooked per package direction 1/2 cup unsalted butter 6 cloves of garlic peeled and minced 1 medium yellow onion peeled and chopped 1 can 15 oz cream of mushroom 2 lbs fresh clams steam 1 cup of clam juice handful of kale parsley and mint for garnishing ground black pepper and salt to taste Preparation: 1. Peel the onion and chopped. 2. Peel the garlic and mince. 3. Remove kale stem and cut the leaves about 1/2 inch thick Cooking: 1. Heat pan on high flame and melt butter. 2. Saute onions and stir for about 1 minute or until slightly brown. 3. Saute garlic for about 1 minute. 4. Add kale, stir and let simmer for 1 to 2 minutes. 5. Add cream of mushroom and clam juice, then stir. 6. Add cooked penne pasta and teaspoon of ground black pepper. Stir thoroughly. 7. Add cooked clam meat with shell. Cover and simmer for about 2 minutes. 8. Garnish chopped fresh mint and parsley before serving. Serve hot. Enjoy! Note: All times are approximations. Adjust flavors by increasing/decreasing amounts of ingredients.
