2 pieces Crabs (steam and drain) or can be fresh
10 stalks Water Spinach
10 pieces Winged beans
25 pieces String beans
1 stalk Lemongrass
1 red and green Bell pepper
1 yellow or red onion minced
6 cloves garlic minced
2” ginger sliced into strips
1 pack coconut milk
1 can coconut milk
1 tbsp veggie bouillon
Preparation:
1. Smash garlic and mince.
2. Smash ginger and mince onion.
3. Slice bell pepper lengthwise.
4. Smash lemongrass and tight
5. Slice winged beans about 1 inch long
6. Slice string beans about 2 inches long
7. Cut water spinach.
Cooking:1. In a heated large pan pour coconut milk.
2. Add onion, ginger, garlic, lemon and bouillon. Stir and let it boil for about 2 minutes.
3. Add string beans and winged beans. Stir and cover. Cook for 5 to 7 minutes or until vegetable are tender.
4. Add steam crabs. Cover and cook for another 5 minutes.
5. Add water spinach and red bell pepper. Cover and simmer for another 3 minutes.
6. Uncover and add salt to taste. Serve hot with rice. Enjoy!
Note: All times are approximations. Adjust flavors by increasing/decreasing amounts of ingredients.
