Delicious Filipino Pork Humba

Ingredients: 2.6 lbs pork shoulder part cut about 1.5 inches cubes 3 tablespoon cooking oil 6 cloves of garlic minced 1 small red onion chopped 3 tablespoon soy sauce 2 tablespoon vinegar 4 tablespoon brown sugar 2 pieces dried bay leaves 1 can 180gms salted black beans 1/2 cup banana blossoms soak in a cold water for about 10 minutes 1 can 20 oz pineapple sliced drained and save the juice 1 cup Sprite Salt and pepper Preparation: 1. Soak banana blossoms in a cup of cold water for 10 minutes. 2. Meanwhile, slice onion, garlic and meat (cube about 1.5 inches) 3. Open the pineapple sliced and salted black beans. Drain and set aside the pineapple juice. Discard the salted black beans juice. Cooking: 1. Heat pan and sauté onion and garlic about 2 minutes or until onion is slightly brown and soft. 2. Add soy sauce, bay leaves, salt and pepper. 3. Add pork let fry until meat is golden brown. Add pineapple juice and sprite. Simmer and let boil for about 1 minute cover and let boil about 30 to 50 minutes. 4. Add the vinegar simmer for about 2 minutes without stirring. After stir and cover simmer for 5 minutes. 5. Add black beans, sugar, banana blossoms and pineapple sliced let it boil for additional 5 minutes. Serve hot. Enjoy! Note: All times are approximations. Adjust flavors by increasing/decreasing amounts of ingredients.
