Prep time: 20 mins; Cooking time: 30 minutes
Ingredients:
2 pieces large tilapia scaled, cleaned and rub with salt
Canola oil
4 tbsp black beans (drain)
1/2 orange bell pepper (optional)
1/2 green bell pepper sliced thinly
5 stalks of green onion sliced 1 1/2 “ long
1 medium size red onion chopped
3 cloves of garlic minced
1 1/2 “ ginger sliced thinly
2 large tomatoes cubes
Salt and ground black pepper to taste
1 tsp oyster sauce (optional)
1/2 cup water
Preparation: 1. Clean tilapia thoroughly, pat dry and rub with small amount of salt. Set aside.
2. Mince garlic, chop onion, slice ginger, bell pepper, green onion and tomatoes.
Cooking:
1. Heat pan and oil on a high flame.
2. Drop tilapia and let it become brown before flipping about 5 minutes each side. Set aside.
3. In the same pan, sauté onion until slightly brown.
4. Add garlic and ginger continue sautéing about 1 minute.
5. Add tomatoes simmer until soft.
6. Add water, oyster sauce, black beans, and bell peppers.
7. Boil. Add salt and pepper if necessary.
8. Add green onions.
9. Pour sauce in the tilapia. Serve hot. Enjoy!
Note: All times are approximations. Adjust flavors by increasing/decreasing amounts of ingredients.
