Prep time: 15 mins; Cook time: 20 mins
Ingredients:
17.6 oz penne noodles
1 pound chicken breast sliced cubes or lengthwise
1 can 18oz creamy mushroom
1 can 15 oz whole mushroom (fresh mushroom is better)
1 medium yellow onion chopped
6 cloves garlic minced
Handful of kale
2 tbsp unsalted butter
1 tbsp olive oil
1 tbsp chicken bouillon paste
Salt and pepper to taste
Preparation:
- Boil a pot of water for cooking pasta
- Chop onion and mince garlic
- Slice or chop kale. Remove the stem because some kids do not like stem. But this is optional you can just chop it
- Boil pasta according to package instructions, open can of whole mushrooms, and can of creamy mushroom
- Drain the whole mushroom
- Slice chicken breast into bite size
- Drain cooked pasta & add oil to prevent sticking to each other
Cooking:
- Heat pan and pour olive oil. Pour onion. Saute about a minute add on garlic and butter.
- Add chicken continue cooking until chicken slices slightly brown. Add chicken bouillon paste.
- Add cream of mushroom. Stir and add water if it is too thick. Let it simmer for about 3 minutes.
- Add kale and mushroom. Simmer for another 2 minutes.
- Add cooked pasta stir and adjust taste by adding salt and pepper. Serve hot. Enjoy!
Note: All times are approximations. Adjust flavors by increasing/decreasing amounts of ingredients.
