Creamy Chicken Kale Mushroom Pasta

Ingredients:


17.6 oz penne noodles

1 pound chicken breast sliced cubes or lengthwise

1 can 18oz creamy mushroom

1 can 15 oz whole mushroom (fresh mushroom is better)

1 medium yellow onion chopped

6 cloves garlic minced

Handful of kale

2 tbsp unsalted butter

1 tbsp olive oil

1 tbsp chicken bouillon paste

Salt and pepper to taste


Preparation:

  1. Boil a pot of water for cooking pasta
  2. Chop onion and mince garlic
  3. Slice or chop kale. Remove the stem because some kids do not like stem. But this is optional you can just chop it
  4. Boil pasta according to package instructions, open can of whole mushrooms, and can of creamy mushroom
  5. Drain the whole mushroom
  6. Slice chicken breast into bite size
  7. Drain cooked pasta & add oil to prevent sticking to each other

Cooking:

  1. Heat pan and pour olive oil. Pour onion. Saute about a minute add on garlic and butter.
  2. Add chicken continue cooking until chicken slices slightly brown. Add chicken bouillon paste. 
  3. Add cream of mushroom. Stir and add water if it is too thick. Let it simmer for about 3 minutes.
  4. Add kale and mushroom. Simmer for another 2 minutes.
  5. Add cooked pasta stir and adjust taste by adding salt and pepper. Serve hot. Enjoy!

Note: All times are approximations. Adjust flavors by increasing/decreasing amounts of ingredients.
