Prep time: 20 mins; Cook time: 30 mins; Bake time: 40 mins
Ingredients:
2 medium size Italian eggplant
Salt
907 grams mozzarella cheese
50 grams grated Romano cheese (optional)
200 grams mixed of cheese (provolone, cheddar cheese, part skim mozzarella)
2 eggs scrambled seasoned with salt and ground pepper
1 1/2 cups Italian breadcrumbs for coating
1 cup gluten free flour for coating
Olive oil for frying
907 grams mozzarella cheese

Sauce Ingredients:
3 tbsp olive oil
32 oz tomato sauce
1 medium onion minced
6 cloves of garlic minced
1 tsp dried oregano
1 tsp dried basil
1/2 tsp salt
1/2 tsp ground black pepper
Preparation:
1. Slice and peeled onion and garlic
2. Transfer onion and garlic to food processor. Pulse for 2 minutes
3. Sliced the eggplant lengthwise 1/4 inch thick
4. Sprinkle salt on both sides of eggplant slices. This is to remove the bitter taste of the eggplant. Set aside for 15 minutes
5. Scramble 2 eggs
6. Mix flour, salt and ground black pepper.
7. Pat dry the eggplant with paper towel & coat the eggplant one at a time onto flour
Sauce:
1. In a high heat pour olive oil and sauté onion and garlic about 2 to 3 minutes or until translucent
2. Add tomato sauce. Stir
3. Add dried oregano, basil, salt and ground black pepper. Let is simmer for about 10 minutes
Eggplant:
1. Heat the frying pan and pour generous amount of olive oil
2. Coat eggplant with egg then breadcrumbs
3. Fry for about 2 minutes each side or until golden brown
Baking:
1. Preheat oven to 350 F
2. Spread tomato sauce mixture at the bottom of the baking pan
3. Lay fried eggplant then spread tomato sauce mixture and the cheese
4. Repeat the layering process until all the eggplant is finish
5. Top with the remaining tomato mix and cheese and mozzarella
6. Cover with foil. Bake for 40 minutes
7. Uncover then bake for additional 5 minutes until the top edge of the mozzarella turn light brown
8. Let it cool for 5 minutes. Serve hot. Enjoy!
